Dinner Drama

Tonight I made one of my stand by dinners...Honey Glazed Salmon with Rice Pilaf and Brocolli. As usual Liam Refused to eat it or even come to the table without a screaming fit. He actually refuses to eat just about anything I make, so this wasn't a big surprise. Miracle of miracles though, when Bevan came home from his night class he actually with no trouble whatsoever got Liam to eat rice, brocolli and some Salmon....a full meal in one sitting! It was amazing, I can't remember the last time Liam willingly consented to eat a green vegetable. Having a dad around is producing miracles indeed! Way to go Bevan.

Honey glazed salmon is a "stand-by" dinner? Yikes! I am so below you. A Standby dinner for me is some jerky. IO would hate see what your real dinners are like... actually I would love to try one. I just dont want to feel guilty about not doing as much as you do for one dinner.

Oh I wouldn't even know where to start to make honey glazed salmon. Way to go! I have a hard enough time trying to even get dinner made with Savannah crawling all over the place, and you have 2 to chase after.

It's really easy actually...I keep a bag of frozen Salmon from Sam's in the Freezer and just thaw however many pieces I need. And then it is just a simple glaze of honey, lemon and orange juice, a little hoisin sauce and salt and pepper. Just mix that together brush it on the fish and broil for 10 min. It takes less than 15 min. to make. If you want the recipe you can haave it. Its my favourite way to eat fish and so fast.

That just sounds difficult to make. What the heck is hoison sauce? I guess the hardest part is I cannot stand eating salmon.

amanda I would love your salmon recipe!! We love to eat salmon. The frozen filets at costco are awesome and they always seem to have fresh salmon for super cheap..I love sams/costco!
You are quite the chef.

For Rachel and anyone else who is interested here is the recipe, ENJOY!:

Honey Glazed Salmon

-2 Tbsp. honey
-1 Tbsp. orange juice
-1 Tbsp. lemon juice
-1 Tbsp. hoisin sauce
-2 tsp. dijon mustard
-1/4 tsp. salt
-1/4 tsp. pepper
-4 (6oz.) salmon fillets

1.preheat broiler
2.combine first 7 ingrediants, stir well with a whisk.
3.place fillets on a broiler pan coated with cooking spray. brush with honey mixture; cook 8 to 10 min. or until fisk flakes easily when tested with a fork, basting frequently with honey minture.

P.S. hoisin sauce is in a jar in the Asain foods section.
